One Bowl Gluten Free Chocolate Cake

Ingredients
140 g gluten free self raising flour (1 cup)
3 tablespoon cacao
149 g Natvia (3/4 cup)
2 eggs
90 g butter, melted
1 teaspoon vanilla
0.5 teaspoon xanthan gum
Pinch salt
Icing:
30 g butter
90 g Natvia Dark Chocolate
2 tablespoon Natvia, blitzed to a fine consistency
2 tablespoon hot water
Method
- Preheat oven to 180°C (160°C fan-forced). Grease and line 20cm cake tin with baking paper.
- n the bowl of an electric mixer, place all of the ingredients and beat on medium speed for 3 minutes.
- Pour the mixture into the prepared tin and bake for 30 minutes or until cake springs back when lightly pressed. Leave in the tin for 5 minutes before transferring to a wire rack to cool completely.
- To make the icing, melt the butter and dark chocolate together in a bowl. Add the Natvia and hot water. Stir until combined, smooth and glossy.
- Spread the icing over the cake once cool.
