
Peanut Butter, Berry and Chocolate Ice Cream Bars

From the crispy chocolate base to the creamy berry filling and crunchy topping, every layer is made with simple ingredients and no added sugar. Perfect for after-school snacks, lunchboxes, or weekend treats the whole family will love!
Ingredients
For the base -
- 30g rice crispies
- 2 tablespoons coconut oil
- 2 tablespoons nut butter
- 2 tablespoons Natvia Stevia Synbiotic Sweetener 250g
- 2 tablespoons cocoa powder
For the filling -
- 300g natural yogurt
- 2 tablespoons no added sugar jam
- 3 tablespoons Natvia Stevia Synbiotic Sweetener 250g
For the topping -
- 1 tablespoon coconut oil
- 2 tablespoons peanut butter
- Granola and freeze-dried berries, to sprinkle
Method
- First make the base: Melt the coconut oil and nut butter then stir in the Natvia and cocoa powder plus rice crispies. Divide this between a 16 individual silicone bar mold to fill each up to ⅓ and press down. Freeze while you make the next layer.
- Blend or whisk together the yogurt, jam and Natvia until smooth then spoon this over each base to fill nearly to the top and spread out.
- Melt the nut butter and coconut oil then drizzle this roughly over each one, then sprinkle over some granola and freeze-dried berry pieces on top.
- Freeze the bars for at least 4 hours or overnight. Then when ready to eat, pop out of the freezer 5 minutes beforehand, grab a bar and enjoy!
