Pear Pudding

Ingredients

  • 2 eggs
  • 1/4 cup/45g/1.5 oz Natvia
  • 1 tsp vanilla extract
  • 1/2 cup/75g/2.6 oz plain flour
  • 3/4 tsp baking powder
  • 1/8 tsp salt
  • 1/4 tsp cinnamon
  • 2 pears, peeled, cored, and thinly sliced
Makes: 4 dishes

Directions

  1. Preheat oven to 180°C and grease 4 small baking dishes.
  2. Whisk the eggs, Natvia, and vanilla extract until light and fluffy.
  3. Add the plain flour, baking powder, salt, and cinnamon and mix until combined.
  4. Divide into the 4 baking dishes and add 1/2 of a pear on top.
  5. Bake for 15-20 minutes until a tooth pick comes out clean.
  6. Serve warm with Natvia Icing Mix or sugar free whipped cream.
