Ingredients
Lemon loaf:
- 2 eggs
- 250g Greek yogurt
- 1 tsp vanilla extract
- 1/2 cup Natvia Natural Sweetener 350g
- 2 Tbsp lemon juice
- 1 Tbsp lemon zest
- 120g ap flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- pinch of salt
- 60g vanilla protein powder
Lemon drizzle:
- 1/3 cup Natvia Natural Sweetener 350g
- 2 tsp lemon juice
- 50g Greek yogurt
Method
- Preheat oven to 180°C/ 350°F.
- To make the lemon loaf, whisk the wet ingredients, then sift in the flour, baking powder, baking soda, and salt, and add the protein powder.
- Stir to combine. Grease or line a loaf tin and pour the batter in.
- Bake for approximately 30-35 minutes then let cool completely.
- To make the icing, blend Natvia Sweetener Canister 350g to make sugar free icing sugar, then stir in the lemon juice and yogurt.
- Drizzle icing over the lemon loaf, zest lemon, and slice into 10 pieces.
- Store in the fridge or freezer.
