
Sugar Free Christmas Shortbreads
Ingredients
1 cup/250g/8.4 oz butter room temperature
1/3 cup/60g/2 oz Natvia
1 tsp vanilla extract
1 1/2 cups/225g/8 oz gluten free flour
2/3 cup/100g/3.5 oz rice flour

Directions
1. Preheat oven to 180°C and line sheet trays with baking paper.
2. Paddle butter until light and fluffy. Add Natvia and mix until combined.
3. Add vanilla extract and mix until combined.
4. Add both flours and mix until combined.
5. Place on to a flour surfaced and roll out dough to 1 cm and cut out into desired shapes.
6.Place onto trays and bake for 8-10 minutes until very lightly golden brown and baked.
7. Remove from trays and cool completely on metal racks.
