Vegan Banana Choc Muffins
Makes 12 muffins
Ingredients3 medium bananas, mashed 1/3 cup/60g/2 oz Natvia 1/4 cup/60ml olive oil 1 3/4 cup/262g/9.2 oz wholemeal self raising flour pinch of salt 1 tsp vanilla powder 1/3 cup/60g/2 oz vegan chocolate chopped
- Pre-heat oven to 180C and pre-line your desired sized muffin tins.
- Place all of your ingredients (except for the chocolate) into a large bowl. Use a hand-held mixer to combine all the ingredients until smooth.
- Add your chopped chocolate into your mixture and fold in until evenly dispersed. Evenly divide your mixture into either 6 large muffins, or 12 normal sized muffins in your pre-lined muffin tin.
- Cook for 20-40 minutes (depending on size chosen). Wait until browned on top and a skewer comes out clean when stuck into the middle of them.
