Apricot Coconut Roll
Ingredients
1.5 cup Dried Apricots
1.5 cup Desiccated Coconut
0.5 Zest of Orange
1 tablespoon Natvia
Method
- Add 1 & 1/2 cups of dried apricots and also 1 & 1/2 cups desiccated coconut to a food processor.
- Zest 1/2 of 1 orange into the food processor and add 1 tbsp Natvia.
- Blend the mixture in the food processor until it has formed dough like substance.
- Take the dough out of the food processor and roll into the shape of a compressed log.
- Coat and roll the log in desiccated coconut until evenly covered with a coconut exterior.
- Cut into slices and enjoy a sugar free fruit roll!
