BAKED PLUM, CHOCOLATE & VANILLA RICE PUDDING

250 g Cooked rice (can be a microwave pouch)
400 mls Milk of choice
40 g Natvia
1 teaspoon Vanilla extract
6 Plums, stoned and sliced
75 g No added sugar Chocolate, chopped into pieces
1 tablespoon Natvia
1 teaspoon Cinnamon
- Preheat the oven to 170C and grease and line a deep baking dish.
- Break up the rice and place in a bowl. Whisk the milk, Natvia, eggs and vanilla well then pour over and mix.
- Stir in the plums and chocolate pieces then pour into the dish, spreading out the fruit and chocolate. Mix together the Natvia and cinnamon and sprinkle over the top.
- Bake for 35-40 minutes until golden and thickened. Leave to stand for 10 minutes then enjoy hot or cold.
