PEACH & CHERRY JAM COCONUT CAKE

120 g Oat flour
50 g Desiccated Coconut
20 g Coconut Flour
80 g Natvia
1 teaspoon Baking Powder
300 mls Milk of Choice
3 tablespoon Oil
1 teaspoon Vanilla extract
400 g Peaches, sliced
6 tablespoon Cherry jam, no added sugar
- Preheat the oven to 170C and lightly grease a 20cm loose bottom tart tin.
- Mix together the flour, coconut, coconut flour, Natvia and baking powder in a bowl.
- Whisk the milk, oil and extract then pour into the dry ingredients and gently mix. Spoon into the tin and smooth out evenly.
- Dot over the jam then use a knife to swirl. Arrange the peach slices on top then bake for 25-30 minutes until firm. Leave to cool then serve with coconut cream and chips!
