BANANA OAT MUFFINS

Banana Oat Muffins

Ingredients

  • 2 cups/300g/10.7 oz Plain Flour
  • 3 tsp baking powder
  • 1/2 tsp Baking soda
  • 1/4 tsp Ground cinnamon
  • 2/3 cup/60g/2 oz rolled oats
  • 1/2 cup/90g/ Natvia
  • 2 each Banana sliced
  • 2 each Eggs, lightly beaten
  • 1 1/2 cup/375g/13.3 oz plain yogurt
  • 1/2 cup/120ml/4 oz Canola oil

Directions

  1. Preheat oven to 180˚C conventional. Grease a 12-hole (80 ml) muffin tin.
  2. Sift flour, baking powder, cinnamon and bicarb soda in large bowl.
  3. Stir in oats, Natvia and banana.
  4. In a separate bowl combine lightly beaten egg, yogurt and canola oil.
  5. Gently stir yogurt mixture into the flour, until just combined. Don’t over-mix.
  6. Spoon mixture into muffin tin and bake for 15-20min or until skewer inserted in the middle comes out clean.
