Berry Cheesecake Double Layered Flapjacks

This Berry Cheesecake Double Layered Flapjacks is not only delicious but has no added sugars! It comes together in minutes and is so easy that anyone can make it!

Cook/Chill: 25-30 minutes bake - chill for an 1 hour

Ingredients

BASE & TOPPINGS

200g oats

50g Natvia natural sweetener

3 tablespoons coconut oil

3 tablespoons smooth nut butter

4 tablespoons no added sugar jam

CHEESECAKE LAYER

150g soft cheese (can be dairy-free)

4 tablespoons Natvia natural sweetener

2 tablespoons cornflour

1 teaspoon vanilla extract

Method

  1. First make the base and topping: Mix together the oats, sweetener, coconut oil and nut butter in a bowl until it comes together in a flapjack mixture.
  2. Spread half of this into the base of a greased and lined 9x9in baking tin and press down well. Spread the jam over to cover the base.
  3. Next beat together the soft cheese, Natvia, cornflour and vanilla, then spread this over the top of the jam to cover.
  4. Sprinkle over the remaining oat mixture to cover and press down gently. Bake at 180C for 25-30 minutes until golden. Leave to cool then chill in the fridge for 1 hour to firm. Cut into bars or squares and enjoy!
