Berry Cheesecake Double Layered Flapjacks

Ingredients
BASE & TOPPINGS
200g oats
50g Natvia natural sweetener
3 tablespoons coconut oil
3 tablespoons smooth nut butter
4 tablespoons no added sugar jam
CHEESECAKE LAYER
150g soft cheese (can be dairy-free)
4 tablespoons Natvia natural sweetener
2 tablespoons cornflour
1 teaspoon vanilla extract
Method
- First make the base and topping: Mix together the oats, sweetener, coconut oil and nut butter in a bowl until it comes together in a flapjack mixture.
- Spread half of this into the base of a greased and lined 9x9in baking tin and press down well. Spread the jam over to cover the base.
- Next beat together the soft cheese, Natvia, cornflour and vanilla, then spread this over the top of the jam to cover.
- Sprinkle over the remaining oat mixture to cover and press down gently. Bake at 180C for 25-30 minutes until golden. Leave to cool then chill in the fridge for 1 hour to firm. Cut into bars or squares and enjoy!
