Chia Seed Banana Pudding

Ingredients

1 1/2 cups coconut milk 1 1/2 cups soy milk 7 bananas, peeled 1 tsp cinnamon + 1/2 tsp all spice mix 1 tsp vanilla extract 2 tbsp Natvia 3/4 cup chia seeds 1/4 cup rolled oat 1/2 cup vanilla greek yogurt + topping (optional) Shredded coconut for garnish (optional)

Method

  1. Combine soy milk, coconut milk, 4 bananas, spices, vanilla extract and Natvia in blender or food processor. Blend on high speed until smooth.
  2. In a medium sized bowl, combine the banana mixture and chia seeds. Stir well to combine, and place it in refrigerator overnight.
  3. Before serving stir the chia seed and banana mix to mix it evenly.  To serve: transfer the chia banana pudding into 6 bowls, glasses or mason jars, and top with yoghurt and banana slice. Enjoy!
