Ingredients
- 1 1/2 cups coconut milk
- 1 1/2 cups soy milk
- 7 bananas, peeled
- 1 tsp cinnamon + 1/2 tsp all spice mix
- 1 tsp vanilla extract
- 2 tbsp Natvia
- 3/4 cup chia seeds
- 1/4 cup rolled oat
- 1/2 cup vanilla greek yogurt + topping (optional)
- Shredded coconut for garnish (optional)
Directions
- Combine soy milk, coconut milk, 4 bananas, spices, vanilla extract and Natvia in blender or food processor. Blend on high speed until smooth.
- In a medium sized bowl, combine the banana mixture and chia seeds. Stir well to combine, and place it in refrigerator overnight.
- Before serving stir the chia seed and banana mix to mix it evenly. To serve: transfer the chia banana pudding into 6 bowls, glasses or mason jars, and top with yoghurt and banana slice. Enjoy!
