- 50g Greek yoghurt (room temp)
- 40g dark chocolate
- 10g coconut oil or butter, plus extra for greasing
- 20g cocoa powder , plus extra for dusting
- 2 tbsp Natvia Sweetener Stevia Synbiotics
- 1 egg
- 30g self raising flour
- 2 tbsp milk
To serve:
- Handful of crushed pistachios
- Ice cream or yogurt
Method
- Break the chocolate into a ramekin and add the coconut oil, carefully melt in the microwave.
- To a large bowl add the yogurt, egg and Natvia Sweetener Stevia Synbiotics and whisk until smooth and combined.
- Pour in the melted chocolate and whisk thoroughly.
- Add the cocoa powder, self raising flour and milk and stir until just combined (use extra milk if needed to loosen).
- Grease two ramekins really well with coconut oil or butter then dust each with cocoa powder.
- Spoon the mixture equally between the two ramekins.
- Preheat the airfryer then bake for 8 minutes at 180°c.
- Turn the puddings out, top with either ice cream or yogurt and a sprinkle of crushed pistachios. Enjoy!
