CHOCOLATE STUFFED COOKIES

100g gluten-free flour
100g Natvia natural sweetener
2 tablespoons smooth nut butter
100ml oat milk
1 teaspoon vanilla extract
3 tablespoons smooth nut butter
2 tablespoons cocoa powder
2 tablespoons Natvia natural sweetener
1-2 tablespoons oat milk
Pinch of cinnamon
- Make the cookies: Place the ingredients in a blender and whizz up until the mixture comes together in a dough.
- Whisk together the filling ingredients until quite thick, almost like a paste.
- Divide the cookie mixture into 8-10 pieces, then for each one, split in half, place a small teaspoon of the filling in the middle, then arrange the other half of the cookie mixture over the top. Repeat for each one.
- Place on a lined baking tray and bake at 180C for 12-15 minutes until golden, then leave to cool and enjoy!
