EASY CHICKEN MOLE POBLANO

Easy Chicken Mole Poblano

Recipe by Nourish Everyday Serves 4-6
Ingredients:
  • 600 grams chicken thighs, skinless and boneless
  • 1-2 cloves garlic
  • 1 brown onion
  • 1 red chilli
  • 2-3 capsicums a.k.a. peppers (any colour)
  • 2 tbsp olive oil, extra virgin, for frying
  • MOLE SAUCE
  • 2 dried ancho chillies
  • 400 grams tinned tomatoes
  • 2 tbsp peanut butter (100% peanuts, smooth)
  • 4 tbsp cacao powder (or unsweetened cocoa powder)
  • 1.5 tbsp Natvia
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • EXTRAS
  • 1 small bunch coriander, fresh, to garnish
  • rice and salad to serve alongside
  • sour cream or greek yoghurt to serve alongside
