- 600 grams chicken thighs, skinless and boneless
- 1-2 cloves garlic
- 1 brown onion
- 1 red chilli
- 2-3 capsicums a.k.a. peppers (any colour)
- 2 tbsp olive oil, extra virgin, for frying
- MOLE SAUCE
- 2 dried ancho chillies
- 400 grams tinned tomatoes
- 2 tbsp peanut butter (100% peanuts, smooth)
- 4 tbsp cacao powder (or unsweetened cocoa powder)
- 1.5 tbsp Natvia
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp ground coriander
- 1/2 tsp ground cinnamon
- EXTRAS
- 1 small bunch coriander, fresh, to garnish
- rice and salad to serve alongside
- sour cream or greek yoghurt to serve alongside
