TRIPLE CHOCOLATE PEANUT BUTTER CUPS

Ingredients

For the cup cases -
  • 50g oat flour
  • 50g rolled oats
  • 2 scoops chocolate protein powder
  • 30g cocoa powder
  • 3 tablespoons Natvia natural sweetener
  • 3 tablespoons coconut oil, melted
  For the bottom chocolate layer -
  • 4 heaped teaspoons Nuttvia spread
  • 1 teaspoon coconut oil
  For the peanut butter filling -
  • 4 heaped teaspoons peanut butter
  For the chocolate topping -
  • 60g no added sugar dark chocolate
  • 1 teaspoon coconut oil

Method

  1. Combine the ingredients for the cup cases plus 2-3 tablespoons warm water to form a dough-like consistency.
  2. Press the mixture between 4-5 silicone muffin cases up the sides and across the bottom to form cases.
  3. Gently melt the Nuttvia and coconut oil then spoon one teaspoon each to fill ⅓. Chill in the fridge for about 30 minutes to set.
  4. Next place a teaspoon of the peanut butter and spread over the chocolate layer to cover.
  5. Gently melt the dark chocolate and coconut oil then pour over the peanut butter to cover. Return to the fridge and chill for at least 1 hour.
  6. When ready to serve, simply pop out of the fridge and eat straight away - enjoy!
