Vegan Chia Seed Pudding with Caramelised Banana

Perfect for when you have some time in the morning or want to impress that special someone, this recipe combines a slew of mouthwatering flavours for to indulge in refined sugar-free! Enjoy!

Ingredients

For the chia pudding
  • ¼ cup chia seeds
  • ½ cup soya yogurt (or your favorite dairy-free yogurt)
  • ½ cup coconut milk
  • 2 tsps. Natvia Natural Sweetener
For the caramelised banana
  • 1 ripe banana
  • 2-4 tsp. olive oil
  • 2 tsp. Natvia Natural Sweetener
Toppings
  • Strawberries
  • Bee pollen
  • Peanut butter
  • Chia seeds

Method

  1. Begin by preparing the chia seed pudding, place all of the 4 ingredients into a plastic container, stir, place a lid and store in the fridge overnight.
  2. In the morning, pour the chia pudding into a breakfast bowl.
  3. Bring a pan to low-medium heat, pour the olive oil, and allow it to heat, peel the banana, slice in half and place over the heated oil and sprinkle some of the Natvia Natural Sweetener. Turn the bananas around carefully using a spatula to caramelise the opposite side.
  4. Place the caramelised banana over the chia pudding along with chopped strawberries, peanut butter and sprinkle some bee pollen and chia seeds.
  5. Enjoy while the banana slices are warm.
