VEGAN GLUTEN-FREE GOJI BERRY AND DARK CHOCOLATE FLAPJACKS

Ingredients
- 100g Natvia sweetener
- 140g dairy-free butter (melted)
- 400g gluten-free oats
- 3 tbsp. chia seeds
- 80g goji berries
- 100ml coconut milk
- 200g vegan dark chocolate
Method
- Pre-heat the oven to 180C degrees.
- Using a large mixing bowl, pour the Natvia sweetener, oats, chia seeds and goji berries and stir to combine the ingredients together.
- Melt the butter and pour over the oats along with the coconut milk and stir thoroughly to combine the ingredients together.
- Pour the flapjack mixture into a tray lined with greaseproof paper (a 26x20x5 tin) place in the oven and bake for 25-30 minutes.
- Once the flapjacks have baked through, allow them to cool completely.
- Melt the dark chocolate over hot water, pour over the cold flapjacks and place in the freezer for 15-25 minutes to allow the chocolate to set.
- Cut into even squares.
