VEGAN APPLE CRUMBLE CHIA PUDDING

Ingredients

CHIA PUDDING:  
  • ¼ cup chia seeds
  • 1 cup coconut milk
  • 1 tbsp. Natvia sweetner
  COOKED APPLES:  
  • 2 apples
  • ¼ cup Natvia sweetener
  • 2 tsp. ground cinnamon
  • 4-5 tbsp water
  EXTRA INGREDIENTS:  
  • GRANOLA OF CHOICE

Method

  1. Begin by soaking the chia seeds in coconut milk and Natvia, stir and store in the fridge overnight so the seeds expand overnight.
  2. The following day create the apple filling for the middle, add two apples of choice (chopped into small cubes – cooked with the skin), place in a small saucepan, with the Natvia sweetener, cinnamon and water and allow the apples to simmer for 15-20 on low heat.
  3. Pour the cooked apples over the chia seed pudding and top with your favourite granola.
