VEGAN APPLE CRUMBLE CHIA PUDDING

Ingredients
CHIA PUDDING:- ¼ cup chia seeds
- 1 cup coconut milk
- 1 tbsp. Natvia sweetner
- 2 apples
- ¼ cup Natvia sweetener
- 2 tsp. ground cinnamon
- 4-5 tbsp water
- GRANOLA OF CHOICE
Method
- Begin by soaking the chia seeds in coconut milk and Natvia, stir and store in the fridge overnight so the seeds expand overnight.
- The following day create the apple filling for the middle, add two apples of choice (chopped into small cubes – cooked with the skin), place in a small saucepan, with the Natvia sweetener, cinnamon and water and allow the apples to simmer for 15-20 on low heat.
- Pour the cooked apples over the chia seed pudding and top with your favourite granola.
