
White Chocolate, Lemon and Berry Blondies
Intro

Ingredients
- 100g gluten-free flour
- 100g Natvia Natvia Stevia Synbiotic Sweetener 250g
- 1 teaspoon baking powder
- 4 tablespoons natural / coconut yogurt
- 70ml milk of choice
- 2 tablespoons oil
- Juice and zest of 2 lemons
- 1 teaspoon vanilla extract
- 70g frozen berries
- 70g no added sugar white chocolate, cut into chunks
To drizzle
- 1 teaspoon coconut oil
- 20g no added sugar white chocolate
Method
- In a large bowl mix together the flour, Natvia Stevia Synbiotic Sweetener 250g and baking powder.
- Whisk together the yogurt, milk, oil, lemon zest and juice and vanilla then pour into the bowl and mix well to combine. Gently fold in the berries and most of the chocolate.
- Spoon into a greased and lined 9x9in baking tin then scatter over the remaining chocolate. Bake at 180C for 25 minutes until firm and golden.
- Leave to cool, then pop out onto a wire rack. Melt the coconut oil and chocolate and drizzle over. Allow to stand for 30 minutes - then slice up and enjoy!
