APPLE, CRANBERRY & CHESTNUT SQUARES

Ingredients

  • 50g apple puree
  • 3 tablespoons almond butter
  • 1 teaspoon vanilla extract
  • 150g oat flour
  • 100g brown rice flour
  • 2 tablespoons flaxseeds
  • 75g Natvia natural sweetener
  • 2 teaspoons mixed spice
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 75g dried cranberries
  • 100g cooked chestnuts, chopped

Method

  1. Preheat the oven to 180 degrees C and grease and line a 20cm loose-bottomed cake tin.
  2. Place the apples, almond butter and vanilla in a blender and whizz up until completely smooth.
  3. Add in the flours, Natvia natural sweetener, flaxseeds, spices and baking powder and whizz up again until a batter has formed.
  4. Fold in the cranberries and chestnuts then spoon into the tin and spread out evenly. Bake for 20-25 minutes until golden and firmed up. Leave to cool then cut into bars.
