APPLE, CRANBERRY & CHESTNUT SQUARES

Ingredients

50g apple puree

3 tablespoons almond butter

1 teaspoon vanilla extract

150g oat flour

100g brown rice flour

2 tablespoons flaxseeds

75g Natvia natural sweetener

2 teaspoons mixed spice
-
1 teaspoon cinnamon

1 teaspoon baking powder
-
75g dried cranberries
-
100g cooked chestnuts, chopped
Method
- Preheat the oven to 180 degrees C and grease and line a 20cm loose-bottomed cake tin.
- Place the apples, almond butter and vanilla in a blender and whizz up until completely smooth.
- Add in the flours, Natvia natural sweetener, flaxseeds, spices and baking powder and whizz up again until a batter has formed.
- Fold in the cranberries and chestnuts then spoon into the tin and spread out evenly. Bake for 20-25 minutes until golden and firmed up. Leave to cool then cut into bars.
