
Granola With Spiced Pears

Ingredients
For the granola -
- 2 tablespoons coconut oil
- 3 tablespoons nut butter
- 3 tablespoons Natvia Synbiotic sweetener
- 150g oats
- 40g flaked almonds
- 40g dried cranberries
- 40g dried mango, chopped
- 40g pumpkin seeds
- 1 teaspoon cinnamon
- ½ teaspoon ground ginger
- Pinch of nutmeg
For the spiced pears -
- 1 teaspoon coconut oil
- 1 teaspoon Natvia Synbiotic sweetener
- Pinch of cinnamon
- Pinch of ground ginger
- 2 pears, sliced
- Serve with natural / coconut yogurt
Method
Make it!
- First melt the coconut oil and nut butter then mix in the rest of the ingredients until fully combined.
- Spread the mixture out onto a greased and lined large baking tray and bake at 170C for 15-20 minutes. Important tip: check after every 8 minutes or so and use a spoon to mix and spread round again to make sure an even bake!
- Leave to cool completely for the granola to ‘set’ and form into clumps.
- Meanwhile heat the coconut oil in a pan then add in the Natvia, cinnamon, ginger and pear slices. Cook on a medium heat for about 8 minutes until golden and caramelised, then set aside.
- Serve out some yogurt in a bowl then top with a generous helping of the pears (while still warm if you wish!) and granola. Enjoy!
