Jam is a great addition to so many things! Toast? Tick! Cakes? Tick. Scones? Double tick! It's sweet, rich berry flavour makes it an absolute delight to indulge in. Unfortunately, Jam is usually laden with sugar which is used to bind the ingredients together. In our sugar-free jam recipe, we replace sugar as a binding agent with Xanthum gum which can be purchased at health food stores. This sugar-free jam recipes taste amazing on our sugar-free scones, which you can check out here! Wake up this weekend to this classic breakfast combination knowing you're consuming any refined sugars! What's sweeter than that! makes approx. 200ml of Jam Prep time: 25minutes Cooking time: 30 minutes Notes: This will not be a preserve – will only last for about 1 week if covered and kept refrigerated.

Ingredients:

  • 2 cups Raspberries
  • ¼ cup Lemon juice
  • 1 tsp vanilla extract
  • ¼ cup Natvia
  • 1 tsp Xanthum gum

Method

  1. Add the raspberries, juice and 2 tablespoons of water to a saucepan and bring to a boil and then lower heat to simmer. Add the vanilla extract. simmer for 15 minutes as the mixture thickens.
  2. Stir through the Natvia and cook for a further 3 minutes.
  3. Evenly sprinkle over the xanthum gum and stir immediately. Continue to stir for 1-2 minutes and then pour into a sterilized jar or container.
  4. Once the jam has cooled enough, place in the fridge for at least 30 minutes
