Triple Chocolate Fudge Bites

Ingredients
BASE:
100 g Nuts
100 g Oats, rolled
4 tablespoon Cacao or Cocoa Powder
4 tablespoon Natvia Natural Sweetener
3 tablespoon Nut Butter
1 teaspoon Cinnamon
MIDDLE LAYER:
400 mls Coconut milk, chilled in the fridge over night
1 Banana
4 tablespoon Cacao Powder
6 tablespoon Natvia Natural Sweetener
1 teaspoon Vanilla Extract
TOPPING:
2 tablespoon Coconut Oil
2 tablespoon Nut Butter, smooth
4 tablespoon Natvia Natural Sweetener
5 tablespoon Cacao or Cocoa Powder
1 Walnuts and Cacao nibs, decoration
Method
- Place the ingredients into a blender and whizz up until broken down and the mixture sticks together.
- Press into a lined 15cm x 20cm tin and chill in the fridge while you make the next part.
- Scrape the solid part of the coconut milk from the can into a blender/food processor and add the banana, cacao powder, Natvia and vanilla. Blend until smooth then spread this over the base. Freeze for 2 hours to set.
- Melt the coconut oil and nut butter then whisk in the Natvia and cacao/cocoa powder until smooth. Pour this over the middle layer to cover then scatter over cacao nibs and walnut pieces. Place back in the freezer for 30 minutes.
- When ready to serve, remove from the freezer 10 minutes beforehand, cut into pieces and enjoy!
