Classic Vegan Choc-Chip Cookies

Prep: 15 minutes
Cook/Chill: 12-18 minutes
Ingredients
1 cup buckwheat flour
1 cup oat flour
1/4 cup sweetener
1 tsp baking powder
Pinch salt
3 tbsp coconut oil melted
2 tbsp apple sauce
1/4 cup aquafaba
1 tbsp pure maple syrup
1 tsp vanilla
Dash plant based milk (gradually add to make dough consistency)
1 block dark chocolate chopped

Method
- Preheat oven to 170 degrees
- Add dry ingredients (except choc) in a bowl and mix together
- Add the wet ingredients and thoroughly combine
- Add dark chocolate, stir then use your hands to form a dough. Add a splash more milk or apple sauce if too dry
- Roll 1tbsp of dough per cookie and place on a lined baking tray
- Bake for around 12-18 minutes until golden and cooked through
- Allow to cool & enjoy!
