Almond Butter Blondies

These simple and easy Almond Butter Blondies are definitely worth a try! This deliciousness is diabetic friendly, gluten free and have no added sugars!!  

Serves: 16

Cook/Chill: 30 minutes

Ingredients

cup ¼ cup Unsalted Butter, softened

160 g ¾ cup Smooth Almond Butter

2 Eggs

cup ½ cup Natvia

1 teaspoon Vanilla

¾ cup Gluten Free Self Raising Flour

¼ tsp Salt

1 cup Sugar Free White Choc Chips

Method

  1. Preheat oven to 180C. Line an 8-inch-square baking with baking paper.
  2. Beat butter and almond butter in a mixing bowl with an electric mixer until creamy. Beat in eggs, Natvia and vanilla. Add flour and salt into the bowl and stir to combine
  3. Stir in chocolate chips. Spread the batter evenly into the prepared pan.
  4. Bake for 25-30 minutes or until a toothpick inserted into the centre comes out with just a few moist crumbs on it. Let it cool in the pan for 45 minutes.
  5. Cut into squares, enjoy!
