Apple & Blueberry Tart

Ingredients

FOR THE TART CASE AND TOPPING:

200 g Oats

50 g Nuts of choice

20 g Natvia Natural Sweetener

1 teaspoon Cinnamon

4 tablespoon Coconut Oil, or Oil of choice

1 Flax Egg

FOR THE FILLING:

120 g Cooked Apple Slices

75 g Frozen Blueberries

4 tablespoon Natvia Natural Sweetener

Method

  1. Preheat the oven to 170C and grease a 20cm loose-bottomed tart tin and place on a baking tray.
  2. Place the case ingredients into a blender and pulse a few times until the mixture comes together.
  3. Press 3⁄4 of the mixture into the tin, across the bottom and up the sides. Bake for 10 minutes.
  4. Mix together the apples, blueberries and Natvia. Remove the tart from the oven, spoon in the fruit to cover then sprinkle over the remaining oat mixture all over.
  5. Bake for a further 15 minutes then leave to cool.
  6. Pop out of the tin, slice and up and serve!
