Chia and Coconut Protein Pancakes

Ingredients
1 tbs chia seeds ¾ cup spelt flour 1 scoop(30g) protein powder 1 tbs vegetable or olive oil 1 cup + 1 tbs coconut milk 1 tbs Natvia Blueberries Topping Greek yoghurt Blueberries
Method
- Combine all the ingredients in a bowl and whisk to combine. Place in the fridge for 20 minutes.
- Heat a pan to medium high, lightly greasing with coconut oil or margarine. Cook 1/3 cup batches of batter for 2-3 minutes, or until the edges start to darken and bubble dot the surface then flip and cook for a further 1 minute. Repeat with remaining batter
- Top with greek yoghurt and blueberries
