CHOCOLATE, PRETZEL & PEANUT BUTTER COOKIES

Ingredients
100g coconut oil, melted
150g Natvia natural sweetener
2 tablespoons smooth nut butter
2 tablespoons almond or oat milk
1 teaspoon vanilla extract
200g gluten-free flour
30g cocoa powder
1 teaspoon baking powder
50g pretzels, broken up into pieces
75g no added sugar dark chocolate chips
30g peanut butter buttons
Method
- Mix together the melted oil, sweetener, nut butter, milk and vanilla until smooth.
- Add in the flour, cocoa powder and baking powder and mix again well to form a dough. Stir in most of the chocolate chips and pretzels.
- Divide into small balls, roll then place on a grease and lined large tray and flatten down, leaving space between others.
- Push in extra pretzels, choc chips and the peanut buttons on top then bake at 180C for 10-12 minutes until golden. Leave to cool on the tray for 5 minutes then pop onto a wire rack to cool - then enjoy!
